No Bake Energy Bites
Ingredients (12 Servings):
For the salad:
- 2 cups rolled oats
- 2/3 cup unsweetened coconut flakes
- 1 cup ground flax seed
- 1 cup natural peanut butter
- ½ cup chocolate chips
- ½ cup honey
- 1 tsp. vanilla extract
Per Serving (1 bar): Calories: 200, Fat: 13g: Sodium: 6mg, Carbohydrates: 16g, Fiber: 3g, Protein: 6g
- Stir all ingredients together in a medium bowl until thoroughly mixed.
- Cover and let chill in the refrigerator for 30 minutes to 1 hour. Once chilled, roll into 12 balls.
- Store in an airtight container and keep refrigerated up to 1 week.
