No Bake Energy Bites

Ingredients (12 Servings):
For the salad:

  • 2 cups rolled oats
  • 2/3 cup unsweetened coconut flakes
  • 1 cup ground flax seed
  • 1 cup natural peanut butter
  • ½ cup chocolate chips
  • ½ cup honey
  • 1 tsp. vanilla extract

  1. Stir all ingredients together in a medium bowl until thoroughly mixed.
  2. Cover and let chill in the refrigerator for 30 minutes to 1 hour. Once chilled, roll into 12 balls.
  3. Store in an airtight container and keep refrigerated up to 1 week.
